Cast Iron Skillets
Cast iron skillets are the most popular piece of cast iron cookware. Cast iron skillets are made of a porous material that will absorb oil and develop a protective coating on its surface over time, which is called seasoning. This process makes a cast iron skillet into a non-stick pan, but without the harmful chemicals that are often applied to other types of non stick cookware.
Cast iron skillets come in a variety of sizes and shapes, but the round skillet is the most popular. Round skillets vary in size from 5” in diameter to 17” in diameter and most round cast iron skillets have a spout on each side for pouring. A 10 ¼” skillet can cook eggs and sausage, or make small stir-frys as well as many other dishes while a larger size skillet of 12” or more would be appropriate for cooking for a family as larger skillets can accommodate a larger amount of food.

Cast iron skillets of different sizes and shapes have unique abilities. For example, a deep pan or fryer holds more oil and is perfect for frying foods and a square 10 ½” skillet is just the right size and shape for baking cornbread. A chef’s skillet has slanted sides and a handle for cooks who shake as well as stir while cooking.
Clearly the cast iron skillet is one of the most versatile pieces of cookware available for use in the kitchen.
