Cast iron Dutch ovens heat food evenly and keep the food warm longer. The original Dutch oven during the colonial period was made of heavy cast iron and had three or four short legs. These are referred to as “Outdoor” Dutch ovens and are usually used when camping or over a fireplace. The other oven, known as the “Kitchen” Dutch oven, has no legs.
